|Pancakes with passionfruit yoghurt|
It's day before Ash Wednesday which is the start of Lent and the time to get rid of those pesky little luxuries like eggs, butter and milk that you're not supposed to eat until Easter Sunday.
This recipe came from my being a little greedy when I bought a 2kg container of passionfruit yoghurt.
After 5 days of having it for breakfast I could do no more, delicious as it was.
This such an EASY recipe and QUICK too. They're very light and fluffy because you start with a thick consistancy, due to the yoghurt, and there is less flour per spoonful leading to a more delicate structure than you would get if using milk.
If you can't get passionfruit yoghurt, try rhubarb or gooseberry, something with a bit of bite.
1 cup plain flour
1 teaspoon of bicarbonate of soda
1 1/2 cups of yoghurt
Butter to fry
Mix the flour and bicarb together then add the yoghurt.
Rest the batter for 5 minutes, it will hubble and bubble a bit,and look too thick but don't worry. Fry in a medium hot pan in dollops till golden brown on both sides.
They freeze and re-heat well but best to eat them straight out of the pan.
